Simple Muffin Egg Frittatas

Welcome to Monday my friends and thank you so much for following! This past week was hellacious and every day was jam packed full of to do’s and endless jobs. But today starts a new week and a new month – so cheers to that! Speaking about starting a new month I have a post being featured on Her View From Home!! It’s a piece very dear to my heart about the journey my husband and I went through in our marriage and how we overcame it. Please hop on over to it and check it out! You can see it here!

One of the things I had going on this week was one of my dear friends baby shower. I had volunteered to host it at  my house since she didn’t have a place to have it. So needless to say I spent most of Thursday and Friday preparing for the baby shower. She was having a brunch themed shower – which includes Mimosas (double check!) and different foods to choose from. that’s why I decided to go with these simple muffin egg frittatas. For the baby shower I made cheese and sausage, zucchini, onion, and cheese, and just zucchini and onion.

Egg frittatas are a delicious egg dish Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. The word frittata is Italian and roughly translates to “fried”.

What’s not to love. I like these more than quiches and making them in muffin tins can speed up your daily routine. You can make a bunch of these for the week and freeze them, then reheat in the oven or microwave and BAM – breakfast is served!

Remember my Delicious Guacamole recipe? Well guacamole + frittatas  = happiness.

I am planning on doing a very special Mother’s Day post – I don’t want to say too much about it now because I think it is going to hit home with a lot of moms and I hope that you check it out! I will tell you that it involves 4 very special people that helped me out with this one – you don’t want to miss it!

Ingredients
Servings: Egg muffins
Instructions
  1. Whisk together milk, eggs, salt, and pepper.
  2. Whisk in cheese and sausage.
  3. Pour into muffin pan. I used 1/4 cup each and it was great. They were not huge but not tiny either. NOTE: I did not use liners and did spray with non-stick spray. But, the egg was still difficult to get off the pan. So next time I will maybe try muffin cups.
  4. Bake for 25 minutes. My sausage did float to the top so if you mis again once in the muffin pan they might incorporate better.
  5. Let cool for 5 minutes and then take out and cool further on rack.
Recipe Notes

You can freeze or refrigerate these for later. Reheat in microwave or oven! Enjoy!

For the zucchini, onion, and cheese use 2/3 cup shredded zucchini, 2 Tablespoons onion, and 1 cup cheese. Mix other ingredients first, then add veggies and cheese. Cook the same amount of time and pow now you have vegetarian frittatas!
