Welcome to Monday my friends and thank you so much for following! This past week was hellacious and every day was jam packed full of to do’s and endless jobs. But today starts a new week and a new month – so cheers to that! Speaking about starting a new month I have a post being featured on Her View From Home!! One of the things I had going on this week was one of my dear friends baby shower. I had volunteered to host it at my house since she didn’t have a place to have it. So needless to say I spent most of Thursday and Friday preparing for the baby shower. She was having a brunch themed shower – which includes Mimosas (double check!) and different foods to choose from. that’s why I decided to go with these simple muffin egg frittatas. For the baby shower I made cheese and sausage, zucchini, onion, and cheese, and just zucchini and onion.
Egg frittatas are a delicious egg dish Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. The word frittata is Italian and roughly translates to “fried”.
What’s not to love. I like these more than quiches and making them in muffin tins can speed up your daily routine. You can make a bunch of these for the week and freeze them, then reheat in the oven or microwave and BAM – breakfast is served!
